Smoked Gouda is our version of a pasteurized cows milk creamy Gouda cheese with a slightly sweet Applewood smoke flavor.  The cheese is cold smoked over Applewood chips to give just the right amount of smoke flavor. – Dry Riesling 2016 Green Bottle

Sage Derby is our newest addition to our unpasteurized cow milk cheese line. It is a mild, mottled green, semi-hard cheese with a hint of garden sage running throughout. With its attractive green color it makes a very nice addition to the cheese board.  Pairs well with zinfandel or syrah wines or for beer try a pale or amber ale. – Sweet Bottom White 2016

Garden Herb is a flavorful cheese that begins with our Banklick Cream. Creamy and nutty with the addition of thyme, rosemary, basil and savory. Melts beautifully and adds a light herbal note to creamy baked pasta. Made from unpasteurized cows milk. – Brittany White 2016

Maddie’s Gold is our rendition of a traditional Double Gloucester. It is a semi-hard cheese with an earthy flavor and a slight tang similar to sharp cheddar. The wonderful rind that develops on this cheese makes it easy to grate on tomato soup, tacos or scrambled eggs.
Pairs well with stout, port and quality red wines. Made from unpasteurized cows milk. – Some Like it Red

Banklick Pub is a creamy Cotswold with the addition of flavorful chives and onions. It’s the perfect compliment to quiche or a grilled burger. Good company for the softer and milder cheese on your cheese board. Made from unpasteurized cows milk
