Dry Riesling with Banklick Cream
Banklick Cream is our version of a Cotswold. It has a creamy texture and a subtle flavor with hints of vanilla and caramel. Adds a punch to a creamy cheese sauce or makes a great grilled cheese sandwich. All of our Banklick cheeses are great for cooking as it melts well and holds its own in the heat. Made from unpasteurized cows milk. Pairs well with white wines, Kentucky Ale or light beer.
Vignoles 2016 with Maddie’s Gold
Maddie’s Gold is our rendition of a Double Gloucester, a semi-hard cheese with an earthy flavor and slight tang, similar to mild cheddar. The wonderful rind makes it easy to grate over tacos, eggs or any favorite dish. Pairs well with stout ale, port and red wine.
Noiret 2016 with Garden Herb
Garden Herb is a flavorful cheese that begins with our Banklick Cream. Creamy and nutty with the addition of thyme, rosemary, basil and savory. Melts beautifully and adds a light herbal note to creamy baked pasta. Made from unpasteurized cows milk.
Cabernet Sauvignon with Pepper Jack
Pepper Jack is our version of a pasteurized cows milk Monterey Jack cheese with a medium to hot jalapeno pepper kick. A creamy cheese base layered with heat, without being overpowering. Melts great over homemade nachos or on top of a grilled burger. Pairs well with White or Rose wine or your favorite Pilsner or IPA beer.
Sweet Bottom Red with Kenton County Colby & Dark Chocolate
Kenton County Colby is our only American-style cheese. It is crafted in the traditional Wisconsin method. Nuttier in flavor than mass-produced Colby, our version has deeper flavor without the waxy texture. Melts well and makes exceptional macaroni and cheese. Made from unpasteurized cows milk.
